Chocolate Brownies for dessert!

Well the pigs in a blanket have to be washed down with chocolate - lol!  I always like chocolate and needed to make a healthy brownie that didn't taste like dirt.  I needed it to be fudgy and chocolatey. 



I tried my sneaky brownies out on my unsuspecting company.  There were 5 kids all 7 and under tasting for me.  They all ate 3 and begged for more!  They turned out better than expected to say the least! 

Here is the recipe:

1/4 cup plus 2 tbsp of vegan margerine (or butter if you rather)
2 eggs
2 tsp vanilla
1/2 cup sugar
1/4 cup pureed blueberries and spinach
1/4 cup pureed white beans
1/4 cup plus 2 tbsp of whole wheat flour
1/4 cup of oatbran
1 tbsp of cocoa powder
1/4 tsp of salt
3/4 cup chocolate chips

Here's how to make them!

Heat up your oven to 350F and prepare a pan by spraying the bottom of a 9x11 baking sheet (for thin brownies, 9x9 for thick ones).  Set aside.

Blend eggs, sugar, vanilla and purees together.  Add oatbran, cocoa and salt and mix.  Add your flour and gently combine to wet it.  Now put aside.  Melt your chocolate chips and your margerine in a small saucepan on the stove.  Once melted, pour into your bowl with the rest of the stuff in it and mix lightly until combined. 

Pour into your prepared pan and bake for 30 minutes or until a toothpick comes out clean.  Let cool completely (if you try to eat these hot you will notice a hint of blueberry). 

Enjoy these little babies!  We sure did.  The whole pan is gone - lol.
